Beer + Cheese = Soup

This is part of Shannon’s Backwards Day at WFMW.

I’ve loved beer-cheese soup since a college-era trip to visit a lifelong friend in Madison, Wisconsin. Beer and cheese abound in Wisconsin and culinary geniuses figured out a way to meld the two into one indulgent concoction.

Over the years I’ve made several batches using different recipes, but have never found The One.

Bombard me with beer-cheese soup recipes.

    Cause I want some beer cheese soup.

    Apparently nobody has a recipe. I’ll just get some beer, refrain from drinking it. I’ll grab any old stinky cheese out of the fridge—Kraft Singles, perhaps.

    Then I’ll tear the dayglo orange square into teeny tiny pieces, insert it into the beer, and shake vigorously.

    Voila! Soup.

  • I am now on a mission to find a beer cheese soup recipe. I had it once about ten years ago and have been in love with it ever since…even though I haven’t ever had it again!

  • Did you ever try Baby Does Beer Cheese Soup? What was the soup like in Wisconsin? I’m guessing soups vary a lot. I will share 2 that I use. One is creamy and silky, the other has a bit more substance. My family likes both.

    Beer Cheese Soup

    3/4 cups chopped onions
    1/2 cup chopped celery
    3 cups peeled and finely chopped potatoes
    2 1/2 cups water
    1/4 cup butter
    1/4 cup flour
    1 1/2 tsp salt
    1/2 tsp dry mustard
    1/4 tsp pepper
    1 1/2 cups milk
    1 cup beer
    1 1/2 tsp Worcestershire sauce
    3/4 cup (6 oz) cubed process cheese (or slices of American Cheese)
    3/4 cup (6 oz.)grated sharp cheddar cheese
    1 TBS finely chopped fresh parsley

    Combine potatoes, onion, celery and water. Simmer 15-20 minutes until potatoes are tender. In a separate pan, melt butter. Add flour, salt, pepper, mustard. Cook 1 minute, stirring constantly. Gradually stir in milk, beer, and worcestershire sauce. Cook and stir until thickened. Add cheeses, stirring until melted. Add cheese mix to the potatoe mix. Heat gently and garnish with fresh parsley.

  • Here is the other one:

    Easy Cheese Soup with Beer

    INGREDIENTS:
    1 Half gallon milk
    1 & 1/2 tablespoons instant chicken bouillon
    1 tablespoon Worcestershire sauce
    1 tablespoon hot pepper sauce (adjust to taste, can omit)
    1 & 1/2 tsp. salt
    1/3 cup cornstarch
    1/2 cup cold water
    12 fluid ounces beer (I think the original recipe called for dark)
    1 16 ounce jar processed cheese sauce

    DIRECTIONS:
    1. In a large pot over medium heat, combine the milk, bouillon,
    Worcestershire sauce, hot pepper sauce and salt. Bring close to a boil.
    2. In a small bowl, dissolve the cornstarch in the water and add to the
    soup, stirring well. Add the beer and the cheese sauce, reduce heat to low
    and mix well. Allow to heat through before serving.

    Ohhhh, lots to work with. I’ll put down my can of Coors and Kraft now.

    Joanne, I don’t think I’ve ever seen a recipe where the #1 ingredient is “1 half gallon milk”. Thanks for sharing both styles. The one I had in Wisconsin was pretty hearty.

    Hey mopsy, its your cousin-in-law. I definately had to check out the comments on this post. What could possibly be better than beer and cheese mixed into soup form. Definately going to have to try it.

    Also wanted to let you know that you are officially an Xbox cousin-in-law too. The 360 has a prominent position in my living room. I am currently addicted to rolling up things with my Katamari. I just wish I had one of those Katamari that I could use to roll up all of Pierce’s toys.
